Green Asparagus Strawberry Salad
With delicious green asparagus and fresh strawberries, this recipe tastes wonderful as a side dish to fried chicken breast or salmon. You can also add some goat cheese or mozzarella if you like, so you have a single full meal.
Green Asparagus And Strawberry Salad
- 1/2 lb green asparagus
- 10 oz strawberries
- rapeseed oil
- white balsamic (tip: with mediterranean herbs)
- olive oil
- freshly ground pepper
- lemon juice
Rinse and drain the asparagus and strawberries and cut them into bite-size pieces. Put the strawberries in a shallow bowl.
Heat the oil in a frying pan, sauté the asparagus in it for approx. 5 minutes, wipe with water and cook it 2-3 minutes to the desired strength. Remove from the pan and allow to cool.
Mix the white balsamic with olive oil and a little bit lemon juice, pour over the strawberries.
Add the asparagus and season it with salt and freshly ground pepper.
Spread the salad on two plates and sprinkle the basil on top.
